Instructions
- Crack the eggs and combine them with oil, sugar, and grated zucchini in a large bowl, mixing thoroughly.
- Incorporate the vanilla extract and mix again.
- In another bowl, sift together the flour, baking soda, salt, cinnamon, and baking powder.
- Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
- Toss the chocolate chips with 1 tablespoon of flour to coat them.
- Fold the chocolate chips into the batter using a spatula or spoon.
- Divide the batter evenly between two loaf pans that have been greased or sprayed with cooking spray.
