- 3 cups all-purpose flour (360 g)
- 1 teaspoon salt (5 g)
- 1 teaspoon baking powder (5 g)
- 1 teaspoon baking soda (5 g)
- 1 tablespoon ground cinnamon (15 g)
- 3 large eggs
- 1 cup vegetable oil (240 ml)
- 25 cups white sugar (450 g)
- 3 teaspoons vanilla extract (15 ml)
- 2 cups (480 ml) grated zucchini (about 2 medium zucchinis)
- 1 cup chopped pecans (120 g)
Instructions
- Collect all necessary components. Set your oven to 325 degrees F (165 degrees C) to preheat. Prepare two 8×4-inch loaf pans by coating them with grease and a dusting of flour.
- In a big mixing bowl, combine and sift the flour, salt, baking powder, baking soda, and cinnamon.
- In another large bowl, use an electric mixer to blend the eggs, oil, sugar, and vanilla until they are well mixed. Incorporate the dry mixture into this and mix thoroughly.
- Fold in the grated zucchini and chopped pecans until everything is evenly distributed.
- Transfer the mixture into the pans that have been prepared.
- Place the pans in the preheated oven and bake until a toothpick inserted into the middle comes out clean, approximately 40 to 60 minutes. Allow them to cool in the pans on a wire rack for 20 minutes.
- Use a table knife to gently release the edges. Carefully turn the loaves out onto a wire rack and let them cool entirely.
