- 2 carrots, diced

- 1 teaspoon coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sautéing until translucent.
- Into the pot, toss in the carrots and bell pepper, cooking for an additional five minutes.
- Stir in the spices (cumin, coriander, paprika) and continue cooking for another minute to release the rich aromas.
- Add the chickpeas, diced tomatoes, and vegetable broth, bringing the mixture to a boil.
- Reduce the heat and let the soup simmer for about 20 minutes, allowing the ingredients to meld beautifully.
- Season with salt and pepper to taste and serve hot, garnished with fresh cilantro.
Notes
For a thicker soup, consider pureeing a portion or adding diced potatoes. This soup can be stored in the refrigerator for up to four days or frozen for later use.
