  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sautéing until translucent.
  3. Into the pot, toss in the carrots and bell pepper, cooking for an additional five minutes.
  4. Stir in the spices (cumin, coriander, paprika) and continue cooking for another minute to release the rich aromas.
  5. Add the chickpeas, diced tomatoes, and vegetable broth, bringing the mixture to a boil.
  6. Reduce the heat and let the soup simmer for about 20 minutes, allowing the ingredients to meld beautifully.
  7. Season with salt and pepper to taste and serve hot, garnished with fresh cilantro.

Notes

For a thicker soup, consider pureeing a portion or adding diced potatoes. This soup can be stored in the refrigerator for up to four days or frozen for later use.
