Delicious and hearty mushroom BBQ bacon cheeseburger stuffed peppers, combining classic burger flavors in a healthy, low-carb vessel.

- 6 bell peppers (any color)
- 1 pound ground beef
- 8 oz mushrooms, chopped
- 6 slices bacon, cooked and crumbled
- 1 cup BBQ sauce
- 1 cup shredded cheese
- 1 cup cooked rice or quinoa
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cut peppers in half lengthwise and remove seeds
- Cook ground beef with mushrooms and onions until browned
- Mix in BBQ sauce, cooked rice/quinoa, and bacon
- Fill peppers with mixture and top with cheese
- Bake covered at 350°F for 30-35 minutes
- Uncover and bake additional 10 minutes until cheese is melted
