Ingredients
- Lasagna noodles
- Cooked chicken, shredded
- Mushrooms, sliced
- Ricotta cheese
- Pesto sauce
- Parmesan cheese
- Garlic, minced
- Mozzarella cheese, shredded
- Salt and pepper, to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until softened.
- In a bowl, mix together the cooked chicken, ricotta cheese, pesto sauce, salt, and pepper.
- Place a portion of the chicken mixture onto each lasagna noodle and roll it up.
- Pour some garlic parmesan cheese sauce into the bottom of a baking dish.
- Arrange the lasagna rolls seam-side down in the dish.
- Top with remaining garlic parmesan cheese sauce and sprinkle mozzarella cheese on top.
- Bake for 25-30 minutes or until heated through and cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
For added texture, consider topping your roll-ups with a garlic-butter breadcrumb mixture before baking.
