A warm and comforting meal, these mushroom chicken lasagna roll-ups blend vibrant flavors with creamy ricotta, savory chicken, and earthy mushrooms, delivering a delightful homemade dish.


Ingredients

  • Lasagna noodles
  • Cooked chicken, shredded
  • Mushrooms, sliced
  • Ricotta cheese
  • Pesto sauce
  • Parmesan cheese
  • Garlic, minced
  • Mozzarella cheese, shredded
  • Salt and pepper, to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until softened.
  4. In a bowl, mix together the cooked chicken, ricotta cheese, pesto sauce, salt, and pepper.
  5. Place a portion of the chicken mixture onto each lasagna noodle and roll it up.
  6. Pour some garlic parmesan cheese sauce into the bottom of a baking dish.
  7. Arrange the lasagna rolls seam-side down in the dish.
  8. Top with remaining garlic parmesan cheese sauce and sprinkle mozzarella cheese on top.
  9. Bake for 25-30 minutes or until heated through and cheese is bubbly.
  10. Let it cool for a few minutes before serving.

Notes

For added texture, consider topping your roll-ups with a garlic-butter breadcrumb mixture before baking.
