- 14 oz firm tofu, pressed and cubed
- 8 oz mushrooms, sliced
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas)
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Green onions, sliced (for garnish)
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add cubed tofu and cook until golden and crispy, about 5-7 minutes.
- Remove tofu from the skillet and set aside.
- In the same skillet, add sliced mushrooms and cook until they release moisture and are browned.
- Add garlic and ginger, stirring until fragrant, about 30 seconds.
- Add the mixed vegetables and cook until tender-crisp, about 3-4 minutes.
- Return the crispy tofu to the skillet and pour in the soy sauce, stirring to combine.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced green onions.
Notes
Marinating the tofu in soy sauce for 15 minutes before cooking enhances the flavor. Experiment with different vegetables or spices.
