Ingredients

  • 8 oz mushrooms, sliced
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas)
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add cubed tofu and cook until golden and crispy, about 5-7 minutes.
  3. Remove tofu from the skillet and set aside.
  4. In the same skillet, add sliced mushrooms and cook until they release moisture and are browned.
  5. Add garlic and ginger, stirring until fragrant, about 30 seconds.
  6. Add the mixed vegetables and cook until tender-crisp, about 3-4 minutes.
  7. Return the crispy tofu to the skillet and pour in the soy sauce, stirring to combine.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with sliced green onions.

Notes

Marinating the tofu in soy sauce for 15 minutes before cooking enhances the flavor. Experiment with different vegetables or spices.
