- – 1 ½ cups (360 ml) grated zucchini (about 1-2 small to medium zucchinis)
- – ¾ cup (150 g) sugar
- – ⅓ cup (80 ml) vegetable oil
- – 1 teaspoon (5 ml) vanilla
- – 2 eggs
- – 1 ½ cups (180 g) flour
- – 1 teaspoon (5 ml) baking soda
- – 1/2 teaspoon (3 ml) cinnamon
- – 1/4 teaspoon (1 ml) salt
- – 1/4 teaspoon (1 ml) baking powder
- – ¼ cup (50 g) sugar
- – 1 tablespoon (15 ml) cinnamon
Instructions
- Set your oven to 350°F. Prepare an 8-inch loaf tin by lining it with nonstick foil and lightly coating it with cooking spray. In a big bowl, thoroughly mix together the grated zucchini, sugar, vegetable oil, vanilla extract, and eggs.
- In a separate, smaller bowl, combine the flour, baking soda, cinnamon, salt, and baking powder by whisking them together. Gradually add this dry mixture to the zucchini mixture, stirring until everything is well blended.
- For the cinnamon swirl, whisk together cinnamon and sugar in a small bowl.
- Pour a third of the batter into the loaf tin. Sprinkle half of the cinnamon-sugar blend over it. Add another third of the batter, followed by the rest of the cinnamon-sugar. Finish by pouring the remaining batter on top.
- Bake for 35 to 45 minutes, or until a toothpick inserted in the center comes out clean. Depending on your oven’s settings, altitude, and humidity, you might need to extend the baking time. Check by inserting a toothpick every 5 minutes after reaching 35 minutes.
