- 1 can croissant dough
- 1 egg
- 3 Tbsp (45 ml) sugar (divided in two)
- 3 Tbsp (45 ml) cornstarch
- 1 cup (240 ml) milk
- 1 tsp (5 ml) vanilla extract
- 2 Tbsp (30 ml) butter (cut into small pieces)
- 1 egg
- 1 Tbsp (15 ml) brown sugar
- 4 Tbsp (60 ml) melted chocolate
- 1 Tbsp (15 ml) hazelnuts
Instructions
- Begin by making the vanilla custard: Combine the egg with half of the sugar and the cornstarch.
- Heat the milk along with the remaining sugar and vanilla in a pot until it boils.
- Slowly add half of the heated milk to the egg, sugar, and cornstarch mixture, stirring thoroughly, then return everything to the pot on the stove.
- Continue stirring until it boils again and let it cook for an additional 2 minutes, stirring constantly.
- Take it off the heat and incorporate the butter pieces, mixing well. Cover the surface directly with plastic wrap to avoid forming a skin. Allow it to cool completely.
- In the meantime, lay out the croissant dough and slice it into 3 wide strips, cutting the third one in half. Roll one large strip and continue with half of the smaller strip.
- Create a spiral with each piece and place both on a parchment-lined baking sheet.
- Coat them with a beaten egg and sprinkle brown sugar on top. Place greased cookie cutters around the dough spirals and cover with a baking dish.
- Bake in an oven preheated to 390°F (200°C) for 25 minutes. Transfer the custard to a piping bag.
- Once out of the oven, let them cool. Make two punctures on each roll with a chopstick and fill them with the custard.
- Melt the chocolate and adorn the edge of the rolls, sealing the punctures. Sprinkle crushed hazelnuts over the top. Repeat the process for the second roll.
- Your New York rolls are now ready to enjoy!
