Ingredients
- Peanut butter: 1 cup (240 ml)
- Honey: 1/2 cup (120 ml)
- Vanilla extract: 1 teaspoon (5 ml)
- Quick oats: 3 cups (240 g)
- Dark chocolate chips: 1 cup (175 g)
- Unsalted butter: 1/4 cup (56 g)
- Greek yogurt: 1 cup (245 g)
- Powdered sugar: 1/2 cup (60 g)
Instructions
- In a saucepan, combine 1 cup of peanut butter and 1/2 cup of honey.
- Heat the mixture over low heat, stirring until smooth and combined.
- Remove from heat and stir in 1 teaspoon of vanilla extract.
- Add 3 cups of quick oats to the peanut butter mixture.
- Stir until the oats are fully coated and combined.
- Line a baking dish with parchment paper.
- Press half of the oat mixture evenly into the prepared baking dish.
- In a microwave-safe bowl, combine 1 cup of dark chocolate chips and 1/4 cup of unsalted butter.
- Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Pour the chocolate mixture over the pressed oat layer, spreading evenly.
- Chill in the refrigerator until the chocolate is firm.
- In a mixing bowl, combine 1 cup of Greek yogurt and 1/2 cup of powdered sugar.
- Mix until smooth and creamy.
- Spread the yogurt filling evenly over the chilled chocolate layer.
- Gently press the remaining oat mixture over the yogurt layer.
- Cover and refrigerate the bars for at least 2 hours until set.
- Once set, remove from the dish using the parchment paper.
- Cut into bars and serve.
