Ingredients

  • Peanut butter: 1 cup (240 ml)
  • Honey: 1/2 cup (120 ml)
  • Vanilla extract: 1 teaspoon (5 ml)
  • Quick oats: 3 cups (240 g)
  • Dark chocolate chips: 1 cup (175 g)
  • Unsalted butter: 1/4 cup (56 g)
  • Greek yogurt: 1 cup (245 g)
  • Powdered sugar: 1/2 cup (60 g)

Instructions

  1. In a saucepan, combine 1 cup of peanut butter and 1/2 cup of honey.
  2. Heat the mixture over low heat, stirring until smooth and combined.
  3. Remove from heat and stir in 1 teaspoon of vanilla extract.
  4. Add 3 cups of quick oats to the peanut butter mixture.
  5. Stir until the oats are fully coated and combined.
  6. Line a baking dish with parchment paper.
  7. Press half of the oat mixture evenly into the prepared baking dish.
  8. In a microwave-safe bowl, combine 1 cup of dark chocolate chips and 1/4 cup of unsalted butter.
  9. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  10. Pour the chocolate mixture over the pressed oat layer, spreading evenly.
  11. Chill in the refrigerator until the chocolate is firm.
  12. In a mixing bowl, combine 1 cup of Greek yogurt and 1/2 cup of powdered sugar.
  13. Mix until smooth and creamy.
  14. Spread the yogurt filling evenly over the chilled chocolate layer.
  15. Gently press the remaining oat mixture over the yogurt layer.
  16. Cover and refrigerate the bars for at least 2 hours until set.
  17. Once set, remove from the dish using the parchment paper.
  18. Cut into bars and serve.
