  • 1 cup dark chocolate chips
  • 2 tablespoons coconut oil (for chocolate layer)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a food processor, pulse pistachios and oats until coarsely ground.
  3. Add maple syrup, melted coconut oil, vanilla extract, and salt. Pulse until mixture comes together.
  4. Press mixture firmly into the prepared pan to create an even base layer.
