- 1 ½ cups rolled oats (use certified gluten-free if needed)
- ½ cup maple syrup
- ⅓ cup coconut oil, melted
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 cup dark chocolate chips
- 2 tablespoons coconut oil (for chocolate layer)
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving overhang for easy removal.
- In a food processor, pulse pistachios and oats until coarsely ground.
- Add maple syrup, melted coconut oil, vanilla extract, and salt. Pulse until mixture comes together.
- Press mixture firmly into the prepared pan to create an even base layer.
- Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Pour melted chocolate over the pistachio layer and spread evenly.
- Refrigerate for at least 2 hours or until firm.
- Cut into bars and store in an airtight container in the refrigerator.
Notes
- For a keto-friendly version, substitute rolled oats with almond flour and maple syrup with a keto-friendly sweetener.
- These bars can be stored in the refrigerator for up to one week.
