  • 1/4 teaspoon (1 ml) salt
  • 1/2 cup (60 g) fresh raspberries
  • 1/4 cup (30 g) shredded unsweetened coconut

Instructions

  1. Place the raw almonds in a food processor.
  2. Pulse the almonds until finely ground.
  3. Add the soft pitted dates to the processor.
  4. Process until the mixture starts to clump together.
  5. Add the unsweetened cocoa powder to the mixture.
  6. Pour in the vanilla extract.
  7. Add the salt and process until combined.
  8. Add the fresh raspberries to the processor.
  9. Pulse until the raspberries are fully incorporated.
  10. Add the shredded unsweetened coconut.
  11. Pulse briefly to mix the coconut evenly.
  12. Scoop out small portions of the mixture.
  13. Roll each portion into bite-sized balls.
  14. Place the balls on a lined tray.
  15. Refrigerate for at least 1 hour to firm up.
  16. Store in an airtight container in the fridge.
