- 1 teaspoon (5 ml) vanilla extract
- 1/4 teaspoon (1 ml) salt
- 1/2 cup (60 g) fresh raspberries
- 1/4 cup (30 g) shredded unsweetened coconut
Instructions
- Place the raw almonds in a food processor.
- Pulse the almonds until finely ground.
- Add the soft pitted dates to the processor.
- Process until the mixture starts to clump together.
- Add the unsweetened cocoa powder to the mixture.
- Pour in the vanilla extract.
- Add the salt and process until combined.
- Add the fresh raspberries to the processor.
- Pulse until the raspberries are fully incorporated.
- Add the shredded unsweetened coconut.
- Pulse briefly to mix the coconut evenly.
- Scoop out small portions of the mixture.
- Roll each portion into bite-sized balls.
- Place the balls on a lined tray.
- Refrigerate for at least 1 hour to firm up.
- Store in an airtight container in the fridge.
