- 12 fresh Raspberries
- 3/4 cup (180 ml) Dark Chocolate Chips
- 2 teaspoon (10 ml) s Coconut Oil
Instructions
- In a large bowl, combine the peanut butter, vanilla extract, and maple syrup until the mixture is smooth.
- Add the cocoa powder and almond flour to the mixture, stirring until a dense batter forms.
- To shape the batter, lightly coat your hands with oil and roll a tablespoon of the mixture into small spheres. For a raspberry-filled version, use two tablespoons of the mixture, shape it into a ball, flatten it into a disc, place a raspberry in the center, and fold the edges back to enclose the raspberry.
- Gently shape it back into a ball.
- Place parchment paper on a plate and set it aside.
- Melt the chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals until fully liquefied.
- Utilize two forks to submerge and coat the brownie spheres in the melted chocolate. Let any extra chocolate drip back into the bowl by holding the coated spheres above it for a few moments.
- Place the coated bites on the prepared plate and chill them in the freezer for 15 minutes until the chocolate hardens.
