Description

Chewy and sweet oatmeal bars made with wholesome ingredients, perfect for snacks or gatherings.


Ingredients

  • 1 ½ cups of old-fashioned rolled oats
  • 1 cup of all-purpose flour
  • ¾ cup of packed brown sugar
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 10 tablespoons of unsalted butter, melted
  • 1 teaspoon of vanilla extract
  • ¾ cup of fruit preserves or jam (raspberry, strawberry, or your choice)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, mix oats, flour, brown sugar, baking soda, and salt.
  3. Add melted butter and vanilla to the dry mix. Stir until crumbly and well combined.
  4. Press two-thirds of the oat mixture firmly into the bottom of the pan to form an even base.
  5. Spread fruit preserves gently over the base, ensuring an even layer without disturbing the crust.
  6. Sprinkle the remaining oat mixture evenly on top and gently press it down.
  7. Bake for 30-35 minutes or until golden brown on top and bubbly at the edges.
  8. Let the bars cool completely in the pan before cutting into 12 squares.

Notes

Try experimenting with different fruit preserves or adding nuts for extra texture. Serve warm with ice cream or whipped cream.
