Ingredients

- 1 cup whole-grain oats
- 1/2 cup nut butter (peanut or almond)
- 1/4 cup honey or maple syrup
- 1/4 cup protein powder
- 1/4 cup seeds (chia or flax seeds)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1/2 cup chocolate chips or dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the oats, nut butter, honey or maple syrup, protein powder, seeds, vanilla extract, cinnamon, and salt.
- Mix until well combined.
- If using, fold in chocolate chips or dried fruit.
- Scoop tablespoons of the mixture onto a baking sheet lined with parchment paper, flattening them slightly.
- Bake for 10-12 minutes or until golden.
- Let them cool before enjoying!
Notes
For softer cookies, slightly underbake and let them finish cooking on the baking sheet.
