Ingredients

  • 1 cup whole-grain oats
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein powder
  • 1/4 cup seeds (chia or flax seeds)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1/2 cup chocolate chips or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the oats, nut butter, honey or maple syrup, protein powder, seeds, vanilla extract, cinnamon, and salt.
  3. Mix until well combined.
  4. If using, fold in chocolate chips or dried fruit.
  5. Scoop tablespoons of the mixture onto a baking sheet lined with parchment paper, flattening them slightly.
  6. Bake for 10-12 minutes or until golden.
  7. Let them cool before enjoying!

Notes

For softer cookies, slightly underbake and let them finish cooking on the baking sheet.
