A classic summer picnic side dish featuring crisp vegetables and a tangy, slightly sweet dressing.
Ingredients

- 5 cups green cabbage (thinly sliced)
- 1 cup carrots (shredded)
- 1/2 yellow onion (thinly sliced)
- 1/3 cup sugar
- 1 teaspoon celery seed
- 1 teaspoon Dijon mustard
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/3 cup distilled vinegar
- 1/3 cup olive oil
Instructions
- In a large bowl, toss together the shredded cabbage, shredded carrots, and thinly sliced onion.
- In a small saucepan, whisk together all dressing ingredients except the olive oil. Bring the mixture to a low simmer.
- Slowly whisk in the olive oil and bring the mixture to a boil, cooking for one minute.
- Pour the hot dressing over the vegetables and toss to coat. Cover and refrigerate for at least two hours or overnight.
Notes
For best flavor, allow the coleslaw to chill for at least two hours. This allows the flavors to meld properly.
