  • 1 cup (240 ml) granulated sugar (200 grams)
  • 1/2 cup (120 ml) brown sugar, packed (100 grams)
  • 3/4 cup (180 ml) vegetable oil (180 milliliters)
  • 3 large eggs
  • 2 teaspoons (10 ml) vanilla extract (10 milliliters)
  • 2 cups (480 ml) grated zucchini, packed (about 280 grams)
  • 1/2 cup (120 ml) chopped walnuts (60 grams)
  • 1/2 cup (120 ml) dried cranberries (75 grams)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, beat the granulated sugar, brown sugar, and vegetable oil until well combined.
  5. Add the eggs, one at a time, to the sugar mixture, beating well after each addition.
  6. Stir in the vanilla extract.
  7. Fold the grated zucchini into the wet mixture.
  8. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  9. Fold in the chopped walnuts and raisins.
  10. Pour the batter into the prepared loaf pan.
  11. Bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  12. Allow the bread to cool in the pan for 10 minutes.
  13. Remove the bread from the pan and let it cool completely on a wire rack before slicing.
