- 3 large eggs
- 2 teaspoons (10 ml) vanilla extract (10 milliliters)
- 2 cups (480 ml) grated zucchini, packed (about 280 grams)
- 1/2 cup (120 ml) chopped walnuts (60 grams)
- 1/2 cup (120 ml) dried cranberries (75 grams)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat the granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the eggs, one at a time, to the sugar mixture, beating well after each addition.
- Stir in the vanilla extract.
- Fold the grated zucchini into the wet mixture.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped walnuts and raisins.
- Pour the batter into the prepared loaf pan.
- Bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes.
- Remove the bread from the pan and let it cool completely on a wire rack before slicing.
