  • 3/4 cup butter, melted (170g butter)
  • 15 oz can pumpkin puree (425g pumpkin puree)
  • 2 cups all-purpose flour (240g flour)
  • 2 teaspoons (10 ml) pumpkin pie spice
  • 1 teaspoon (5 ml) cinnamon
  • 2 teaspoons (10 ml) baking powder
  • 1 teaspoon (5 ml) baking soda
  • 1 teaspoon (5 ml) salt
  • 1/2 cup butter, softened (1 stick or 113g butter)
  • 8 oz cream cheese, softened (225g cream cheese)
  • 1 teaspoon (5 ml) vanilla
  • 12 teaspoons (8 ml) milk
  • 4 1/4 cups powdered sugar (530g powdered sugar)

Instructions

  1. Using a hand mixer, blend together the eggs, sugar, melted butter, and pumpkin puree until the mixture is smooth.
  2. In another bowl, mix the dry ingredients together. Gradually incorporate this dry mixture into the pumpkin blend, stirring until everything is well combined.
  3. Transfer the batter into a 15x10x1 inch baking pan. Lining the pan with parchment paper is recommended for easier removal, although greasing is not necessary.
  4. Bake in a preheated oven at 350°F for 25-30 minutes, or until the bars are set. Allow them to cool completely.
  5. Once cooled, cover the bars with the cream cheese frosting as described below.
  6. In a medium bowl, use a mixer to combine the softened cream cheese and butter until creamy.
  7. Gradually add the powdered sugar, incorporating about a cup at a time, and mix until fully blended. Add the vanilla extract between additions of sugar.
  8. If the frosting becomes too thick, add milk one teaspoon at a time to reach the desired consistency. Adjust the sugar and milk as needed for easy spreading.
