Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 6 cups chicken broth
- 2 cups shredded cooked chicken
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- 1/2 cup heavy cream
- Salt and black pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, carrots, and celery; sauté until softened.
- Add minced garlic, thyme, and basil; stir and cook for 1-2 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat to simmer; add gnocchi and shredded chicken.
- Simmer for 5-7 minutes until gnocchi float to the top.
- Stir in spinach and heavy cream; cook for an additional 2 minutes.
- Season with salt and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese.
Notes
For a thicker soup, add more broth or cream. This soup stores well for leftovers in an airtight container in the refrigerator for up to four days.
