  • 6 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery; sauté until softened.
  3. Add minced garlic, thyme, and basil; stir and cook for 1-2 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat to simmer; add gnocchi and shredded chicken.
  6. Simmer for 5-7 minutes until gnocchi float to the top.
  7. Stir in spinach and heavy cream; cook for an additional 2 minutes.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with grated Parmesan cheese.

Notes

For a thicker soup, add more broth or cream. This soup stores well for leftovers in an airtight container in the refrigerator for up to four days.
