Description

A comforting dish featuring fluffy omelets filled with seasoned fried rice and vegetables.


Ingredients

  • 2 cups cooked rice
  • 1 onion, diced
  • 1 carrot, diced
  • 1 cup cooked chicken, diced (optional)
  • 1/2 cup ketchup
  • 2 tablespoons soy sauce
  • 4 eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • Cooking oil

Instructions

  1. Heat a bit of cooking oil over medium heat in a pan. Add the diced onion and carrot, sautéing until they are soft.
  2. Add the cooked rice and stir-fry until heated through.
  3. Mix in the ketchup and soy sauce, seasoning with salt and pepper to taste.
  4. Remove the rice mixture from the pan and set aside.
  5. In a bowl, whisk together the eggs, milk, and a pinch of salt.
  6. Using the same pan, heat a little more oil and pour in the egg mixture, swirling to spread evenly.
  7. Cook until the eggs are just set but still soft.
  8. Place the ketchup fried rice in the center of the omelet, then gently fold the edges over to form a pocket.
  9. Serve hot, garnished with additional ketchup if desired.

Notes

Experiment with adding peas, green onions, or bell peppers for extra flavor.
