Ingredients

- 2 cups cooked rice
- 1 onion, diced
- 1 carrot, diced
- 1 cup cooked chicken, diced (optional)
- 1/2 cup ketchup
- 2 tablespoons soy sauce
- 4 eggs
- 2 tablespoons milk
- Salt and pepper to taste
- Cooking oil
Instructions
- Heat a bit of cooking oil over medium heat in a pan. Add the diced onion and carrot, sautéing until they are soft.
- Add the cooked rice and stir-fry until heated through.
- Mix in the ketchup and soy sauce, seasoning with salt and pepper to taste.
- Remove the rice mixture from the pan and set aside.
- In a bowl, whisk together the eggs, milk, and a pinch of salt.
- Using the same pan, heat a little more oil and pour in the egg mixture, swirling to spread evenly.
- Cook until the eggs are just set but still soft.
- Place the ketchup fried rice in the center of the omelet, then gently fold the edges over to form a pocket.
- Serve hot, garnished with additional ketchup if desired.
Notes
Experiment with adding peas, green onions, or bell peppers for extra flavor.
