- – 1 tsp (5 ml) Baking Powder
- – 1 tsp (5 ml) Baking Soda
- – 2 tsp (10 ml) Ground Cinnamon
- – 1/4 tsp (1 ml) Ground Nutmeg
- – 2 cups (about 340 g) Grated Zucchini (do not drain excess liquid), approximately 3 medium zucchinis
- – 12 oz (340 g) Dark Chocolate Chips, divided (8 oz or 227 g for the bread mixture, remaining 4 oz or 113 g for topping)
Instructions
- Position the oven rack on the second tier and set the oven to preheat at 350°F.
- Thoroughly coat two loaf pans with a baking spray that contains flour or apply vegetable shortening, then lightly dust with flour. Put these aside. Consider using parchment paper as a sling for easy removal of the loaves once baked.
- In a large bowl, combine the sugar, eggs, vegetable oil, and vanilla extract using a whisk.
- Incorporate the flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg into the mixture, stirring until everything is well integrated.
- Use a spoon to fold in the grated zucchini and 8 ounces of chocolate chips.
- Pour the batter evenly into the prepared loaf pans and sprinkle the remaining chocolate chips on top. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the loaves cool in their pans for about 5-10 minutes before taking them out and placing them on cooling racks to cool down fully.
