  • – 3 cups (360 g) All-Purpose Flour
  • – 1/2 cup (48 g) Unsweetened Cocoa Powder
  • – 1 tsp (5 ml) Salt
  • – 1 tsp (5 ml) Baking Powder
  • – 1 tsp (5 ml) Baking Soda
  • – 2 tsp (10 ml) Ground Cinnamon
  • – 1/4 tsp (1 ml) Ground Nutmeg
  • – 2 cups (about 340 g) Grated Zucchini (do not drain excess liquid), approximately 3 medium zucchinis
  • – 12 oz (340 g) Dark Chocolate Chips, divided (8 oz or 227 g for the bread mixture, remaining 4 oz or 113 g for topping)

Instructions

  1. Position the oven rack on the second tier and set the oven to preheat at 350°F.
  2. Thoroughly coat two loaf pans with a baking spray that contains flour or apply vegetable shortening, then lightly dust with flour. Put these aside. Consider using parchment paper as a sling for easy removal of the loaves once baked.
  3. In a large bowl, combine the sugar, eggs, vegetable oil, and vanilla extract using a whisk.
  4. Incorporate the flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg into the mixture, stirring until everything is well integrated.
  5. Use a spoon to fold in the grated zucchini and 8 ounces of chocolate chips.
