- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups enchilada sauce
- 1 teaspoon chili powder

- Salt and pepper to taste
- Cheese for topping (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Heat a large skillet over medium heat.
- Add the ground beef, breaking it apart as it cooks, until browned. Drain excess fat.
- Add the diced onion and bell pepper to the skillet and cook until softened.
- Stir in the black beans and corn, then add the enchilada sauce, chili powder, cumin, salt, and pepper.
- Mix well and bring to a gentle simmer for 5-7 minutes until heated through.
- If desired, sprinkle cheese on top and cover until melted.
- Garnish with fresh cilantro and serve hot.
