  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the ground beef, breaking it apart as it cooks, until browned. Drain excess fat.
  3. Add the diced onion and bell pepper to the skillet and cook until softened.
  4. Stir in the black beans and corn, then add the enchilada sauce, chili powder, cumin, salt, and pepper.
  5. Mix well and bring to a gentle simmer for 5-7 minutes until heated through.
