Ingredients

  • 4 chicken breasts
  • 1/2 cup balsamic vinegar
  • 2 cups cherry tomatoes (halved)
  • 1 cup mozzarella cheese (shredded)
  • 1/4 cup fresh basil (chopped)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned, about 5 minutes each side.
  3. Pour balsamic vinegar over the chicken and add cherry tomatoes.
  4. Transfer the skillet to the oven and bake for 20 minutes.
  5. Remove from oven, sprinkle with mozzarella cheese, and return to oven until cheese is melted, about 5 more minutes.
  6. Garnish with fresh basil before serving.
