- 4–6 bone-in chicken pieces (thighs or breasts)
- 2–3 fresh lemons, sliced
- 1 onion, diced
- 2 cups rice
- 4 cups chicken broth (gluten-free certified)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a heavy-bottomed pot over medium-high heat.
- Sear chicken until golden brown on both sides.
- Remove chicken and add lemon slices to caramelize.
- Add onions and sauté until translucent.
- Deglaze the pot thoroughly to prevent sticking.
- Add rice and chicken broth.
- Return chicken to the pot.
- Simmer gently until rice is tender and chicken is cooked through.
- Let rest for 5-10 minutes before serving.
Notes
- Boneless chicken can be used with 8-10 minutes reduced cooking time.
- Can substitute 3 tablespoons lemon juice plus 1 teaspoon zest if fresh lemons unavailable.
- Add hardy vegetables with onions or tender vegetables in the last 5 minutes.
- Ensure thorough deglazing to prevent rice from sticking.
