One Pot Chili Mac and Cheese

Description

A comforting and hearty dish combining chili flavors with creamy macaroni and cheese, all made in one pot for easy cleanup.


Ingredients

  • 8 oz elbow macaroni
  • 1 lb ground beef or turkey
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 2 cups chicken or vegetable broth
  • 1 packet chili seasoning
  • 1 cup chopped bell peppers (optional)
  • 1 cup corn (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  2. Add the diced tomatoes, kidney beans, broth, chili seasoning, and macaroni to the pot. Stir to combine.
  3. Bring to a boil, then reduce heat and let simmer for about 10-12 minutes, or until the macaroni is cooked through.
  4. If using, add chopped bell peppers and corn during the last 5 minutes of cooking.
  5. Stir in the shredded cheddar cheese until melted and creamy.
  6. Season with salt and pepper to taste, and serve warm.

Notes

For a creamier texture, you can add more cheese or substitute some of the broth with milk. Sauté onions or garlic with the meat for added flavor.
