- 8 oz elbow macaroni
- 1 lb ground beef or turkey
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheddar cheese
- 2 cups chicken or vegetable broth
- 1 packet chili seasoning
- 1 cup chopped bell peppers (optional)
- 1 cup corn (optional)
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
- Add the diced tomatoes, kidney beans, broth, chili seasoning, and macaroni to the pot. Stir to combine.
- Bring to a boil, then reduce heat and let simmer for about 10-12 minutes, or until the macaroni is cooked through.
- If using, add chopped bell peppers and corn during the last 5 minutes of cooking.
- Stir in the shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste, and serve warm.
Notes
For a creamier texture, you can add more cheese or substitute some of the broth with milk. Sauté onions or garlic with the meat for added flavor.
