Description
A comforting and nourishing soup made with lentils and carrots, finished with creamy coconut milk and aromatic spices.
Ingredients

- 1 cup lentils
- 2 cups carrots, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until translucent.
- Add chopped carrots and cook for a few minutes.
- Stir in the lentils, cumin, coriander, salt, and pepper.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for about 25 minutes, or until lentils and carrots are tender.
- Stir in the coconut milk and cook for an additional 5 minutes.
- Adjust seasoning as needed and serve warm.
Notes
Rinse lentils before cooking to remove any debris. Adjust spices to taste and feel free to add fresh herbs for brightness.
