One Pot Creamy Carrot Lentil Soup

Description

A comforting and nourishing soup made with lentils and carrots, finished with creamy coconut milk and aromatic spices.


Ingredients

  • 1 cup lentils
  • 2 cups carrots, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until translucent.
  2. Add chopped carrots and cook for a few minutes.
  3. Stir in the lentils, cumin, coriander, salt, and pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for about 25 minutes, or until lentils and carrots are tender.
  6. Stir in the coconut milk and cook for an additional 5 minutes.
  7. Adjust seasoning as needed and serve warm.

Notes

Rinse lentils before cooking to remove any debris. Adjust spices to taste and feel free to add fresh herbs for brightness.
