Description
Classic Cajun dirty rice made with ground meat, vegetables, and aromatic seasonings that give the rice its characteristic ‘dirty’ appearance.
Ingredients
Scale
- 1 cup long-grain white rice
- Ground meat (chicken, pork, or beef)
- Chicken livers (finely chopped)
- Onion, celery, and bell peppers (holy trinity)
- Garlic
- Cajun seasoning
- Chicken broth
- Cayenne pepper
- Salt and pepper to taste
Instructions
- Prepare and chop all vegetables and meats
- Brown meats in a heavy-bottomed Dutch oven
- Add vegetables and seasonings
- Add rice and broth
- Cover with tight-fitting lid and cook until rice is done
Notes
- Can be made vegetarian using mushrooms and eggplant instead of meat
- Reduce cayenne pepper for less heat
- Use a heavy-bottomed pot with tight-fitting lid
- Prep ingredients up to 2 days in advance
- Store prepped ingredients separately in refrigerator
