Description

Classic Cajun dirty rice made with ground meat, vegetables, and aromatic seasonings that give the rice its characteristic ‘dirty’ appearance.


Ingredients

  • 1 cup long-grain white rice
  • Ground meat (chicken, pork, or beef)
  • Chicken livers (finely chopped)
  • Onion, celery, and bell peppers (holy trinity)
  • Garlic
  • Cajun seasoning
  • Chicken broth
  • Cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Prepare and chop all vegetables and meats
  2. Brown meats in a heavy-bottomed Dutch oven
  3. Add vegetables and seasonings
  4. Add rice and broth
  5. Cover with tight-fitting lid and cook until rice is done

Notes

  • Can be made vegetarian using mushrooms and eggplant instead of meat
  • Reduce cayenne pepper for less heat
  • Use a heavy-bottomed pot with tight-fitting lid
