Instructions
- Heat oil in a large pot over medium-high heat.
- Brown beef chunks in batches until well-seared.
- Add onions and garlic, sauté until softened.
- Stir in paprika.
- Add vegetables, broth, and tomatoes.
- Bring to a boil, then reduce heat and simmer for 2-3 hours until beef is tender.
- If needed, thicken with cornstarch slurry.
- Season with salt and pepper to taste.
Notes
- For slow cooker: Brown meat and sauté vegetables first, then cook on low for 7-8 hours or high for 4-5 hours.
- Use high-quality Hungarian paprika for authentic flavor.
- Ground beef can be substituted, reducing cooking time to 30 minutes.
- To thicken: Mix ¼ cup liquid with 1 tablespoon cornstarch and stir back in.
