- 1 pound Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the Italian sausage and cook until browned, breaking it apart as it cooks.
- Add the diced onion and minced garlic; sauté until the onion is translucent.
- Stir in the orzo pasta and cook for 1-2 minutes.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer until the orzo is cooked and the liquid is mostly absorbed, about 10 minutes.
- Stir in the heavy cream, spinach, Italian seasoning, and season with salt and pepper to taste.
- Cook for an additional 2-3 minutes until the spinach is wilted.
- Serve with grated Parmesan cheese on top.

For added flavor, try using different types of Italian sausage, and consider incorporating other greens like kale or arugula.
