  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the Italian sausage and cook until browned, breaking it apart as it cooks.
  3. Add the diced onion and minced garlic; sauté until the onion is translucent.
  4. Stir in the orzo pasta and cook for 1-2 minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat and simmer until the orzo is cooked and the liquid is mostly absorbed, about 10 minutes.
  7. Stir in the heavy cream, spinach, Italian seasoning, and season with salt and pepper to taste.
  8. Cook for an additional 2-3 minutes until the spinach is wilted.
  9. Serve with grated Parmesan cheese on top.
