Ingredients

  • 1 pound kielbasa sausage, sliced
  • 8 ounces pasta (penne or rotini)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach or kale (optional)
  • Grated parmesan cheese (for serving)

Instructions

  1. In a large pot or skillet, heat a little oil over medium heat. Add chopped onion and sauté until softened. Add minced garlic and cook for 1 minute more.
  2. Add sliced kielbasa and cook until browned.
  3. Stir in the diced tomatoes, chicken broth, pasta, Italian seasoning, salt, and pepper.
  4. Bring to a boil then reduce to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is tender.
  5. If using, stir in spinach or kale until wilted.
  6. Serve hot, topped with grated parmesan cheese.

Notes

For creaminess, stir in heavy cream or cream cheese before serving. You can customize with your favorite vegetables.
