Ingredients

- 1 pound kielbasa sausage, sliced
- 8 ounces pasta (penne or rotini)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup spinach or kale (optional)
- Grated parmesan cheese (for serving)
Instructions
- In a large pot or skillet, heat a little oil over medium heat. Add chopped onion and sauté until softened. Add minced garlic and cook for 1 minute more.
- Add sliced kielbasa and cook until browned.
- Stir in the diced tomatoes, chicken broth, pasta, Italian seasoning, salt, and pepper.
- Bring to a boil then reduce to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is tender.
- If using, stir in spinach or kale until wilted.
- Serve hot, topped with grated parmesan cheese.
Notes
For creaminess, stir in heavy cream or cream cheese before serving. You can customize with your favorite vegetables.
