- 24 ounces of tomato sauce
- 32 ounces of chicken broth
- 1 pound of ground beef
- 9 ounces of gluten-free lasagna noodles
- 4–6 cups of baby spinach
- 2 cups of filtered water
- 1 sweet onion, finely chopped
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
Instructions
- Start by sautéing the onions with olive oil in a large pot until they turn translucent.
- Add ground beef, dried basil, dried oregano, and salt to the pot. Cook the meat on medium/high heat until it’s approximately 90% cooked through.
- Pour in the chicken broth, tomato sauce, and water, stirring to combine.
- Break the gluten-free lasagna noodles into smaller pieces and add them to the pot, ensuring they distribute evenly.
- Cover the pot and let it simmer for 15 minutes, allowing the flavors to meld and the noodles to cook.
- After 15 minutes, uncover the pot and stir in the baby spinach. Simmer for an additional 15 minutes.
- Serve this hearty soup hot and enjoy the deliciousness of one pot lasagna soup!
Notes
For added flavor, consider garnishing with freshly cracked black pepper or Parmesan cheese. This soup tastes even better if refrigerated overnight.
