- 8 oz pasta (such as penne or fusilli)
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup spinach
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, combine the pasta, vegetable broth, cherry tomatoes, onion, garlic, and Italian seasoning.
- Bring to a boil, reduce heat, and simmer for about 10-12 minutes, stirring occasionally until the pasta is cooked and most of the liquid is absorbed.
- Add in the spinach and cook for an additional 2-3 minutes until it wilts.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
For a deeper flavor, sauté the onion and garlic before adding other ingredients. Fresh ingredients yield optimal taste and texture.
