Ingredients

  • 8 oz pasta (such as penne or fusilli)
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, combine the pasta, vegetable broth, cherry tomatoes, onion, garlic, and Italian seasoning.
  2. Bring to a boil, reduce heat, and simmer for about 10-12 minutes, stirring occasionally until the pasta is cooked and most of the liquid is absorbed.
  3. Add in the spinach and cook for an additional 2-3 minutes until it wilts.
  4. Season with salt and pepper to taste.
  5. Serve hot, topped with grated Parmesan cheese if desired.

Notes
