- 1 pound spaghetti or bucatini
- 8 ounces pancetta or bacon, diced
- 3 large eggs
- 1 cup freshly grated Pecorino Romano cheese
- 1 cup freshly grated Parmigiano-Reggiano cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Fresh black pepper to taste
- Salt for pasta water
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced pancetta and cook until crispy.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add pasta and enough water to cover. Cook according to package directions, stirring occasionally.
- While pasta cooks, whisk eggs and grated cheeses in a bowl.
- Once pasta is al dente, remove pot from heat and wait 30 seconds.
- Quickly stir in the egg and cheese mixture, stirring continuously to create a creamy sauce.
- Season with fresh black pepper and garnish with parsley if desired.
Notes
- Remove pot from heat before adding eggs to prevent scrambling.
- Reserve some pasta water to adjust sauce consistency if needed.
- Use freshly grated cheese for the best results.
- Can be made vegetarian by omitting pancetta and adding mushrooms.
