  • Fresh black pepper to taste
  • Salt for pasta water

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced pancetta and cook until crispy.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add pasta and enough water to cover. Cook according to package directions, stirring occasionally.
  4. While pasta cooks, whisk eggs and grated cheeses in a bowl.
  5. Once pasta is al dente, remove pot from heat and wait 30 seconds.
