Ingredients

  • 1 pound of andouille sausage, sliced
  • 1 jalapeño, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cayenne pepper (optional)
  • 1 can of diced tomatoes (14.5 oz)
  • 1 cup of pasta (penne or rigatoni)
  • 2 cups of chicken broth
  • Salt and pepper, to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced andouille sausage and cook until browned, about 5 minutes.
  3. Stir in the jalapeño, bell pepper, onion, and garlic. Cook until vegetables are softened, about 3–4 minutes.
  4. Stir in the smoked paprika, cayenne pepper (if using), diced tomatoes (with juice), pasta, and chicken broth.
  5. Bring to a boil, then reduce heat and let simmer, covered, for about 15 minutes or until the pasta is cooked to al dente.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro before serving.

Notes

For extra flavor, consider adding a splash of hot sauce before serving. This dish can be varied with different vegetables based on availability.
