- 1 tablespoon of olive oil
- 1 pound of andouille sausage, sliced
- 1 jalapeño, sliced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of cayenne pepper (optional)
- 1 can of diced tomatoes (14.5 oz)
- 1 cup of pasta (penne or rigatoni)
- 2 cups of chicken broth
- Salt and pepper, to taste
- Chopped cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced andouille sausage and cook until browned, about 5 minutes.
- Stir in the jalapeño, bell pepper, onion, and garlic. Cook until vegetables are softened, about 3–4 minutes.
- Stir in the smoked paprika, cayenne pepper (if using), diced tomatoes (with juice), pasta, and chicken broth.
- Bring to a boil, then reduce heat and let simmer, covered, for about 15 minutes or until the pasta is cooked to al dente.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro before serving.
Notes
For extra flavor, consider adding a splash of hot sauce before serving. This dish can be varied with different vegetables based on availability.
