Ingredients

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup sugar
  • 1 tbsp rice vinegar
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Oil for frying
  • Green onions, for garnish

Instructions

  1. Prepare three bowls: one for flour, one for beaten eggs, and one for panko breadcrumbs.
  2. Dip chicken pieces in flour, then in egg, and finally coat with panko breadcrumbs.
  3. Heat oil in a large skillet over medium heat and fry the chicken pieces until golden brown and crispy.
  4. Remove the chicken and set aside.
  5. In a saucepan, combine orange juice, soy sauce, sugar, rice vinegar, garlic, and ginger. Bring to a boil.
  6. Mix cornstarch and water in a small bowl, then add to the sauce to thicken.
  7. Add the fried chicken to the sauce and toss to coat.
  8. Serve garnished with green onions.

Serve immediately for optimal crispiness. Garnish with extra green onions before serving.
