- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup cold butter, cubed
- 1 cup heavy cream
- 1 cup raisins
- 2 tablespoons orange zest
- 1 large egg (for egg wash)
- Coarse sugar for topping (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Stir in raisins and orange zest.
- Gradually add heavy cream, stirring until just combined.
- Turn onto a lightly floured surface and gently knead a few times.
- Pat into an 8-inch circle and cut into 8 wedges.
- Brush with beaten egg and sprinkle with coarse sugar if desired.
- Bake for 15-18 minutes or until golden brown.
Notes
- For dairy-free version, use cold coconut oil instead of butter and full-fat coconut milk for cream.
- Don’t overwork the dough to ensure fluffy scones.
- Dough can be prepared 24 hours in advance and refrigerated.
- Uncooked scones can be frozen for up to 3 months.
