Light and fluffy Orange Raisin Scones with a delightful citrus flavor, perfect for breakfast or afternoon tea.

Ingredients

Scale
  • 2½ cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold butter, cubed
  • 1 cup heavy cream
  • 1 cup raisins
  • 2 tablespoons orange zest
  • 1 large egg (for egg wash)
  • Coarse sugar for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Stir in raisins and orange zest.
  5. Gradually add heavy cream, stirring until just combined.
  6. Turn onto a lightly floured surface and gently knead a few times.
  7. Pat into an 8-inch circle and cut into 8 wedges.
  8. Brush with beaten egg and sprinkle with coarse sugar if desired.
  9. Bake for 15-18 minutes or until golden brown.

Notes

  • For dairy-free version, use cold coconut oil instead of butter and full-fat coconut milk for cream.
  • Don’t overwork the dough to ensure fluffy scones.
  • Dough can be prepared 24 hours in advance and refrigerated.
  • Uncooked scones can be frozen for up to 3 months.
  • For stronger orange flavor, add ¼ teaspoon orange extract or use candied orange peel.
  • Dried cranberries can be substituted for raisins.
