- 1/2 teaspoon dried basil
- 1/8 teaspoon dried thyme
- 1/2 cup grated cheddar cheese

Instructions
- Peel and dice the russet potatoes into small cubes.
- In a large pot, combine the diced potatoes, water, and chicken broth.
- Bring the pot to a boil over medium-high heat, then reduce the heat to low. Let the potatoes simmer until tender, approximately 10-15 minutes.
- In a separate saucepan, melt the butter over medium heat.
- Add the diced yellow onion to the melted butter and sauté until the onions are translucent.
- Stir in the all-purpose flour to create a roux, cooking for about 1-2 minutes.
- Gradually whisk in the whole milk, stirring until the mixture thickens.
- Pour the milk mixture into the pot with the cooked potatoes and broth, stirring to combine.
- Season the soup with salt, pepper, dried basil, and dried thyme. Allow it to simmer for another 5-10 minutes.
- Use an immersion blender to blend the soup until it reaches your desired consistency.
- Stir in the grated cheddar cheese until it melts thoroughly.
- Serve hot, garnished with chopped cooked bacon and sliced green onions.
Notes
