Ingredients

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. In a large pot, sauté onions, celery, and carrots until soft.
  2. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Blend soup until smooth (optional).

For a vegetarian option, omit the bacon and use vegetable broth.
