- 3/4 cup (180 ml) warm water (about 115°F, or 45°C)
- 1 teaspoon (5 ml) sugar
- 1 teaspoon (5 ml) instant yeast
- 7 oz (198 g) bread flour (plus more for dusting)
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) baking powder
- 2 teaspoon (10 ml) vegetable oil (and plenty more for frying)
Instructions
- In a bowl, combine the warm water with sugar and yeast. Stir briefly and let sit for a few minutes to allow the yeast to activate.
- In another bowl, mix together the flour, salt, and baking powder until well combined.
- Once the yeast mixture is ready, add the oil and stir. Then, pour this mixture into the bowl with the dry ingredients. Use a spatula or wooden spoon to blend until a soft dough forms.
- Transfer the dough into a Ziploc bag, seal it, and place it in the refrigerator to rest for 12-24 hours or at least overnight.
- After resting, remove the dough from the fridge and let it sit at room temperature for 10-15 minutes to warm slightly.
- Lightly flour a clean surface, then take the dough from the bag and sprinkle it with flour. Divide the dough into two equal parts.
- Form each piece into a long log, pressing gently to remove air. Keep the other piece covered to prevent it from drying out.
- Slice the dough into strips measuring 3″x1¼”. Stack one strip on top of another. Wet the end of a chopstick, coat it with flour, and press it into the center of the dough strips. Refer to the video in the post for a visual guide.
- Heat a generous amount of oil in a deep frying pan until it reaches 350°F. Stretch the dough sticks to double their length before placing them in the hot oil. Quickly turn them in the oil to ensure even expansion.
- Once the dough sticks have expanded, flip them a few times to fry until they achieve a golden, crispy texture.
- Repeat the shaping and frying process until all the dough is used up.

- Let the dough chill in the fridge for 12-24 hours to enhance flavor and texture.
- Stretch the dough strips to double their length before frying for a light, airy result.
- Cover any unused dough to prevent drying out while working with the rest.
