- 4 thin chicken cutlets
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Salt & pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Prepare chicken by seasoning the cutlets with salt and pepper.
- Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs and grated Parmesan.
- Dredge each cutlet in flour, shake off excess.
- Coat each cutlet in the beaten eggs, then in the breadcrumb-Parmesan mixture, pressing gently.
- Heat olive oil in a skillet over medium heat, then add the breaded cutlets and cook for 3 to 4 minutes per side.
- Transfer to a plate once golden brown and crispy.
- Melt butter in the same skillet, add minced garlic and sauté until fragrant.
- Stir in chicken broth, heavy cream, and ¼ cup grated Parmesan, simmer until thickened, seasoning to taste.
- Return chicken cutlets to the skillet, spoon sauce over the top and garnish with parsley or thyme.
- Serve with mashed potatoes, pasta, or roasted vegetables.
Notes
Let breaded chicken rest for 10 minutes before frying for better adhesion.
