  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes thoroughly and halve larger ones for even cooking.
  3. In a small saucepan, melt the butter over low heat with minced garlic until fragrant.
  4. Toss the potatoes in a large bowl with olive oil, salt, pepper, and half of the garlic butter mixture until well-coated.
  5. Sprinkle freshly grated Parmesan over the potatoes and spread them on a parchment-lined baking sheet.
  6. Bake for 30-35 minutes or until golden brown and crispy.
  7. Drizzle the remaining garlic butter over the baked potatoes and garnish with chopped fresh herbs before serving.

Notes
