- 2 pounds baby potatoes
- 1 cup freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- Salt to taste

Instructions
- Preheat your oven to 425°F (220°C).
- Wash the baby potatoes thoroughly and halve larger ones for even cooking.
- In a small saucepan, melt the butter over low heat with minced garlic until fragrant.
- Toss the potatoes in a large bowl with olive oil, salt, pepper, and half of the garlic butter mixture until well-coated.
- Sprinkle freshly grated Parmesan over the potatoes and spread them on a parchment-lined baking sheet.
- Bake for 30-35 minutes or until golden brown and crispy.
- Drizzle the remaining garlic butter over the baked potatoes and garnish with chopped fresh herbs before serving.
Notes
For extra crispiness, broil the potatoes for a couple of minutes at the end. Try different herbs for added flavor complexity.
