- 2 pounds baby potatoes
- 1 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- Salt and pepper to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, mix together olive oil, minced garlic, rosemary, salt, and pepper.
- Add the potatoes to the bowl and toss until they are well coated.
- Spread the potatoes on a baking sheet in a single layer.
- Sprinkle the grated Parmesan cheese evenly over the potatoes.
- Bake in the preheated oven for 25-30 minutes or until the potatoes are golden and crispy.
- Garnish with fresh parsley if desired and serve warm.
Notes
For extra crispy potatoes, soak them in cold water for 30 minutes before baking. Experiment with additional spices for a twist.
