- 2 cups mashed potatoes (cooled)
- ½ cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 large egg
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 2 tablespoons chopped parsley (optional)
- 1 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup breadcrumbs (plain or seasoned)
- Vegetable oil (for deep frying)
Instructions
- Combine cooled mashed potatoes, grated Parmesan cheese, minced garlic, one egg, salt, black pepper, and parsley in a mixing bowl and mix until evenly combined.
- Scoop about one tablespoon of the mixture and roll into a ball; repeat until all mixture is formed into balls.
- Set up coating stations with flour, beaten eggs, and breadcrumbs in separate bowls.
- Roll each ball in flour, dip in the egg wash, and coat with breadcrumbs, then arrange on a plate.
- Heat about 2 inches of vegetable oil in a pan to 350°F (175°C) and fry the balls in batches until golden brown, about 2-3 minutes each batch.
- Transfer fried potato balls to a plate lined with paper towels and serve warm with dipping sauces.
Notes
Use leftover mashed potatoes for better texture. Adjust seasonings to your preference.
