Ingredients

  • 2 cups mashed potatoes (cooled)
  • ½ cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 large egg
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons chopped parsley (optional)
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs (plain or seasoned)
  • Vegetable oil (for deep frying)

Instructions

  1. Combine cooled mashed potatoes, grated Parmesan cheese, minced garlic, one egg, salt, black pepper, and parsley in a mixing bowl and mix until evenly combined.
  2. Scoop about one tablespoon of the mixture and roll into a ball; repeat until all mixture is formed into balls.
  3. Set up coating stations with flour, beaten eggs, and breadcrumbs in separate bowls.
  4. Roll each ball in flour, dip in the egg wash, and coat with breadcrumbs, then arrange on a plate.
  5. Heat about 2 inches of vegetable oil in a pan to 350°F (175°C) and fry the balls in batches until golden brown, about 2-3 minutes each batch.
  6. Transfer fried potato balls to a plate lined with paper towels and serve warm with dipping sauces.

Notes

Use leftover mashed potatoes for better texture. Adjust seasonings to your preference.
