- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 4 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup small pasta (like ditalini)
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned.
- Incorporate the chopped onion, minced garlic, diced carrots, and diced celery. Sauté until softened, about five minutes.
- Stir in the cannellini beans, beef broth, diced tomatoes, dried oregano, salt, and black pepper. Bring to a boil.
- Add the small pasta and cook according to package instructions until al dente.
- Serve hot, garnished with fresh parsley.
Notes
For a richer flavor, you can add red pepper flakes. Leftovers can be stored in an airtight container for up to three days.
