  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 oz small pasta (like ditalini or elbow)
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery; sauté until softened.
  2. Add the ground beef and cook until browned. Drain excess fat if necessary.
  3. Stir in the kidney beans, cannellini beans, beef broth, diced tomatoes, oregano, basil, salt, and pepper. Bring to a boil.
  4. Add the pasta and reduce heat; simmer for about 10-12 minutes, or until pasta is al dente.
  5. Taste and adjust seasoning if needed.
  6. Serve hot, garnished with fresh parsley.

Notes

To enhance flavors, consider toasting dried herbs in olive oil before adding vegetables. For added heat, add red pepper flakes.
