- 1 celery stalk, diced
- 1 pound ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes, with juice
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 8 oz small pasta (like ditalini or elbow)
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery; sauté until softened.
- Add the ground beef and cook until browned. Drain excess fat if necessary.
- Stir in the kidney beans, cannellini beans, beef broth, diced tomatoes, oregano, basil, salt, and pepper. Bring to a boil.
- Add the pasta and reduce heat; simmer for about 10-12 minutes, or until pasta is al dente.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
To enhance flavors, consider toasting dried herbs in olive oil before adding vegetables. For added heat, add red pepper flakes.
