  • ½ cup extra virgin olive oil
  • 1 large sweet onion, finely diced
  • 1 clove garlic, finely diced
  • ¼ tsp red pepper flakes (or to taste)
  • 4 cups water (more as needed)
  • 1 tsp salt (to taste)
  • ¼ tsp black pepper (to taste)
  • 1416 oz baby peas (frozen or fresh)
  • 1 cup Pecorino Romano cheese, grated (or Parmesan cheese)

Instructions

  1. Add the olive oil and chopped onions to your large pan over medium-high heat. Cook the onions until soft, about 4 to 5 minutes, ensuring you don’t let them brown.
  2. Incorporate the finely diced garlic and red pepper flakes. Continue cooking for about one minute until fragrant.
  3. Add four cups of water, salt, and baby peas to the onion mixture, bringing everything to a boil.
  4. Once the mixture reaches a boil, take a handful of peas and mash them with a large spoon or fork, creating a varied texture within your pasta dish.
  5. Add the ditalini pasta and the mashed peas to the pot.
  6. Reduce the heat to medium and let the pasta cook according to package instructions until it reaches al dente, stirring often.
  7. Once your pasta achieves the perfect al dente texture, remove the pot from the stove.
  8. Mix in the grated Pecorino Romano cheese and chopped parsley for that final touch of flavor.
  9. Taste the dish and season with additional salt and black pepper, if necessary. If it seems dry, add a splash of water to loosen it. Serve garnished with extra cheese and black pepper.
