- A pinch of salt (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the butter and granulated sugar until light and fluffy, about 2 minutes. Add the egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until the dough is thick but soft. Mix in the milk until fully combined.
- Divide the dough into five portions and tint each with gel food coloring until the desired pastel color is achieved.
- Scoop about 1 tablespoon of dough for each cookie and roll into smooth balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Bake for 8-10 minutes until edges are set and tops appear cracked. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- For the filling, beat the butter until smooth, gradually add powdered sugar, then mix in heavy cream, vanilla extract, and a pinch of salt until fluffy and spreadable.
- Once cookies are cool, pair them by size. Spread a generous amount of filling on the flat side of one cookie, place another cookie on top and press gently.
- Allow the assembled sandwiches to sit for about 10 minutes to firm up before serving.
Notes
Use a cookie scoop for even-sized dough balls. Chill the dough if too sticky. Add more gel food coloring for vibrant shades and ensure it’s evenly mixed.
