Description
A colorful poke cake with vibrant gelatin stripes that’s perfect for holidays and celebrations. Can be made ahead and customized to your preference.

- 1 box white cake mix
- Ingredients called for on cake mix box (usually eggs, oil, and water)
- 1 package red gelatin (3 oz)
- 1 package blue gelatin (3 oz)
- 2 cups boiling water (1 cup for each gelatin color)
- 1 container whipped topping (8 oz), thawed
- Fresh berries for garnish (optional)
Instructions
- Prepare and bake the white cake according to package directions in a 9×13 inch pan.
- Allow cake to cool for about 15 minutes, then use the handle of a wooden spoon to poke holes all over the cake, about 1 inch apart.
- In separate bowls, dissolve each gelatin in 1 cup of boiling water, stirring for about 2 minutes until completely dissolved.
- Carefully pour the red gelatin into every other row of holes, then pour the blue gelatin into the remaining rows.
- Refrigerate the cake for at least 3 hours or overnight to allow the gelatin to set completely.
- Before serving, spread the whipped topping evenly over the cake and garnish with fresh berries if desired.
Notes
- You can use any colors of gelatin to match different holidays or occasions.
- For best results, make this cake a day ahead to allow the gelatin to fully set.
- Store covered in the refrigerator for up to 3 days.
