Description

  • 1 box white cake mix
  • Ingredients called for on cake mix box (usually eggs, oil, and water)
  • 1 package red gelatin (3 oz)
  • 1 package blue gelatin (3 oz)
  • 2 cups boiling water (1 cup for each gelatin color)
  • 1 container whipped topping (8 oz), thawed
  • Fresh berries for garnish (optional)

Instructions

  1. Prepare and bake the white cake according to package directions in a 9×13 inch pan.
  2. Allow cake to cool for about 15 minutes, then use the handle of a wooden spoon to poke holes all over the cake, about 1 inch apart.
  3. In separate bowls, dissolve each gelatin in 1 cup of boiling water, stirring for about 2 minutes until completely dissolved.
  4. Carefully pour the red gelatin into every other row of holes, then pour the blue gelatin into the remaining rows.
  5. Refrigerate the cake for at least 3 hours or overnight to allow the gelatin to set completely.
  6. Before serving, spread the whipped topping evenly over the cake and garnish with fresh berries if desired.
