Instructions
- In a large bowl, mix peanut butter, softened butter, and vanilla extract until smooth and well combined.
- Gradually add powdered sugar and salt, mixing until fully incorporated. The mixture should be firm enough to handle and shape.
- Shape the peanut butter mixture into egg shapes, about 2-3 tablespoons per egg.
- Place the shaped eggs on a parchment-lined baking sheet and chill in the refrigerator for at least 1 hour.
- In a microwave-safe bowl, melt chocolate chips and shortening in 30-second intervals, stirring between each until smooth.
- Dip each chilled peanut butter egg into the melted chocolate, ensuring it’s completely coated.
- Return the chocolate-coated eggs to the parchment-lined baking sheet and refrigerate until the chocolate is set, about 30 minutes.
- Store in an airtight container in the refrigerator for up to 2 weeks.
