Ingredients

  • 1 cup (240 ml) plain Greek yogurt
  • 1/2 cup (120 ml) creamy peanut butter
  • 1 tablespoon (15 ml) maple syrup or honey
  • 1 teaspoon (5 ml) vanilla extract
  • 2 tablespoon (30 ml) s roasted and salted peanuts (optional )
  • 1 cup (240 ml) chocolate chips or chopped chocolate (6 oz (170 g).)
  • 2 tablespoon (30 ml) s coconut oil

Instructions

  1. Cover a baking tray with wax paper or a silicone mat.
  2. In a small mixing bowl, blend the plain Greek yogurt, creamy peanut butter, maple syrup or honey, and vanilla extract until the texture is smooth.
  3. With a cupcake or ice cream scoop, place approximately half of the yogurt mixture in 4-6 dollops onto the prepared tray. Press a popsicle stick into each dollop, then cover them with the remaining yogurt mixture using the scoop. Slightly press down the mounds using a small offset spatula.
  4. Sprinkle the roasted and salted peanuts evenly over each mound. Freeze the tray for a minimum of 2 hours or until everything is thoroughly frozen.
  5. After freezing, place the chocolate chips or chopped chocolate and coconut oil in a microwave-safe bowl. Heat in the microwave at 50% power for 30 seconds, stir, and continue heating in 15-20 second bursts until completely melted.
  6. Take the tray out of the freezer and immerse each pop into the melted chocolate. Return the pops to the tray and either enjoy right away or place them back in the freezer. If stored in the freezer, allow them to soften for 5-10 minutes before eating, as they will be too hard to bite into immediately.
