- 1 teaspoon (5 ml) vanilla extract
- 1/4 cup all-purpose flour (31 g)
- 1/2 cup plain Greek yogurt (120 g)
- 1/4 teaspoon (1 ml) salt
Instructions
- Preheat the oven to 425°F (220°C).
- Grease four ramekins with butter or cooking spray.
- In a microwave-safe bowl, combine peanut butter, unsalted butter, and chocolate chips.
- Microwave in 30-second intervals, stirring after each, until smooth and melted.
- In a large mixing bowl, whisk together powdered sugar, eggs, egg yolks, and vanilla extract until smooth.
- Gradually add the melted chocolate mixture to the egg mixture, stirring continuously.
- Sift in the all-purpose flour and salt, and gently fold until just combined.
- Divide the batter evenly among the prepared ramekins.
- Place a dollop of Greek yogurt in the center of each ramekin.
- Gently swirl the yogurt with a toothpick or knife into the batter.
- Place the ramekins onto a baking sheet.
- Bake in the preheated oven for 12-14 minutes, until the edges are firm and the center is slightly soft.
- Remove from oven and let cool for 1-2 minutes.
- Run a knife around the edges to loosen the cakes.
- Invert each ramekin onto a plate to release the lava cakes.
- Serve immediately while warm.
